  1. Heat oil in a frying pan then fry the fish. Make sure that salt has been rubbed over the fish before frying.
  2. Remove the fish from the frying pan and place in a a plate with paper towels to drain excess oil. Set aside.
  3. Using a clean pan, heat about 1 tablespoon of cooking oil then sauté sliced onions until they start to turn translucent.
  4. Add minced garlic and saute for a minute more.
  5. Add sliced tomato and cook until the tomato start giving off liquid, about 1-2 minutes.
  6. Add the fish sauce and ground black pepper then stir.
  7. Add water then bring to a boil.
  8. Add the fried fish and simmer for 3 to 5 minutes.
  9. Pour the beaten eggs on the pan. Make sure that it is distributed evenly to other ingredients.
  10. Simmer for another 2 minutes, garnish with spring onions then transfer to a serving plate.
  11. Serve hot over steamed rice. Share, Smile and Enjoy!
